    Neanderthal Man's idea of a food truck was probably a wandering brontosaurus. Modern Man has BC Tacos. BC's tacos are less authentic Mexican than its namesake's eclectic take on everyone's favorite thing to do with a tortilla. They are more or less standard steak, chicken, and seafood tacos, along with such quirkier variations as fried avocado, Buffalo mahi, chicken caesar, pulled pork, and bacon cheeseburger. The specialty, though, is the gut-busting Caveman Taco, a burger patty, shredded beef, and braised short rib all sandwiched between two halves of a crispy corn tortilla, then wrapped in a flour tortilla with cheddar cheese and lettuce. There's also a choice of four house-made salsas, chips, taco lettuce bowls, and even a s'mores taco.

All jokes aside, the truck serves some gourmet offerings you wouldn't be surprised to find in a white-tablecloth establishment — without being stuffy, of course. Crab and corn fritters are served with roasted garlic aioli and fiery fairy hot sauce; grouper tacos come with pineapple salsa, fiery fairy hot sauce, red and green cabbage, avocado crema, and homemade corn tortillas; mushroom risotto balls sit atop tomato sauce with Parmesan cheese. Who doesn’t like a party?

Sabrett 100 percent beef hot dogs are dished out in a bright-yellow New York-themed public school bus and are split in half, grilled, and topped with gourmet toppings. In keeping with the whole academic theme, these ingenious dogs are handed down scholastic names. The FCAT comes with bacon, sweet coleslaw, jalapeños, and barbecue sauce; the Principal Ron has goat cheese, bacon, and barbecue; the Math Wiz is appropriately served with Asian-style slaw and sriracha mayo -- probably, the smartest hot dogs you'll ever stick in your mouth.
