At Blue Willy's BBQ in Oakland Park, you'll get some of the best Texas-style barbecue around, meats such as beef brisket and pork spare ribs prepared the same way chef-owner Will Banks' grandfather cooked them at the family's butcher shop-turned-restaurant. It all starts with the meat, delivered by the same purveyor for over six years, one reason his 'cue remains consistent and some of the best in the tri-county area, from the meaty spare ribs to the juice-dribbling brisket. Aquick drive from I-95 and just a stone's throw from Dixie Highway, the restaurant attracts hundreds of patrons that visit each day. A towering Blue Willy's sign marks the spot, impossible to miss. The menu is the same one Banks has been serving for close to a decade, ten items in all, including five well-constructed staples and five sides, the meat smoked in Banks' hickory-fueled monster, a well-seasoned piece of equipment that's been running almost 24 hours a day for nearly 24 years. In Texas, beef is king, and beef brisket is what Banks does best. His comes out moist and smoky, blanketed in a dense blanket of spices charred black from the smoker, and rendered tender enough to cut with a fork. But make no mistake, though: Banks knows what to do with the hog too. His spare ribs, often considered the Holy Grail of good barbecue, remain this food critic's favorite in these parts. They boast a mélange of flavors, from the pasty spice rub that stains the meat (and your fingers) a rust-colored red to the delicate kiss of hardwood smoke and the distinct flavor of perfectly cooked pork. Owner Albert Houston, a former Marine cook and restaurant developer for Marriott Hotels, focuses on creating consistent, competition-style barbecue - meaning he takes no shortcuts with his ribs, pulled pork, or chicken. Each is dusted in his signature spice rub and smoked slow and low over hickory and apple wood for hours on end until a vibrant, rose smoke ring forms beneath their crispy crusts. The pulled pork is dynamite, served in a huge, juicy mound along with two sections of garlicky Texas toast, and the sides - like daily-made mac 'n' cheese, mayonaisse-ey cole slaw, and bacon-flecked baked beans - are destination-worthy. Even hardcore BBQ fans who prefer their meat without sauce will enjoy the smoky, honey-and-tomato-laced mixture that Houston serves with his platters. And those who want something else on the sugary side should check out the sweet potato pie, a creamy slice of heaven that makes a perfect cap to any BBQ feast.

There are four stellar sauces to choose from: golden mustard, sweet BBQ, spicy BBQ, and North Carolina vinegar sauce. Each table at the outdoor eatery is outfitted with its own "kit" of sauces. You can almost see the twinkle in diners' eyes as they feverishly drizzle their favorite sauce over a pulled pork sandwich or rack of ribs. Overindulge in the Dixie Pig's expansive array of homemade sauces that will, if applied correctly, drip down your arms like a lit candle in a Meat Loaf video. The Georgia-style sauce is thin and bright, the ribs thick and succulent, the chopped beef and pork sandwiches superb -- deeply redolent of hours basting above a plume of burning hickory. The sides could be better and more varied (fries, coleslaw, and beans are about it), but you can't go wrong with coconut cream pie for dessert, slapped down on the table by the friendliest of wait staffs. The homey restaurant is centrally located on 441 in Davie.

    Gilbert's, which sits in the corner of the harbor shops in Fort Lauderdale, is a clean, family-run restaurant, with an all-glass façade and plenty of bright-orange tables. It features a big list of nearly a dozen burgers, plus fish, chicken, and steak sandwiches, some grilled entrées, and a daily rotating cadre of lunch specials. The restaurant is partial service, so to order, you queue up along a counter that looks something like a cafeteria line, with big display cases, and order from the register. Ask for a burger -- voted among the best in South Florida by readers of the Sun-Sentinel -- and what you get is a half-pound, all-Angus beef patty grilled to a healthy char and cooked to your liking inside. There are several varieties, like their Cajun spice-rubbed burger with cheddar cheese or one with crumbled blue cheese stuffed inside the patty. Each is served on a tray lined with faux newspaper and finished off by crisp, greaseless fries. You'll pay as much as $15 after drink, tax, and tip, but for those looking for a thick, restaurant-style burger, Gilbert's is a welcome addition.

    Myung Ga Tofu and BBQ Restaurant is a Korean restaurant but not really a Korean barbecue restaurant: no grills built into the tables, no ventilation hoods overhead. What it serves is authentic Korean comfort food, just like mom used to make. The warm, wood-toned space is filled with Korean families passing along fajita-like platters of bulgoki (spicy, thin-shredded pork) and vegetable-filled pancakes the size of Frisbees. Unlike "small plates" restaurants where people share little bites, sharing huge plates seems pretty much a necessity here. Not only are the portion sizes huge but Myung Ga provides a wide array of banchan - small bowls of vegetables like kimchi or sesame-dressed bean sprouts - with each meal. These banchan are meant to be served as accompaniments to each dish, but they also create a lavish spread on each table.

For this restaurant, he turned to Steve Shockey, a Texas native whom he's worked with for nearly a decade. Before opening, the two brought in a massive wood smoker and spent weeks cooking more than 1,000 pounds of meat, trying to perfect their recipes and methods. Eighteen-dollar Eat Meat combos are what you want when you step inside. Whether you pick thick, smoky slices of beef brisket or the huge beef ribs with a slice of sweet pomegranate barbecue, be sure to order the corn bread. It's like dessert hijacked an appetizer's spot on the menu. Facing death would be easy if coffin makers begin lining boxes with this stuff.

The food isn't exactly Memphis-style barbecue; rather, it tastes like what you might whip up with some friends huddled around a Webber grill. Ribs are the fall-off-the-bone variety, wet and sweet with sticky barbecue sauce that will leave your fingers tacking to the sides of your beer bottle. Pork and beef brisket are each smoky and firmer in texture and taste amazing on a sandwich made with Texas toast and slathered with creamy coleslaw. Rock 'N' Roll Ribs' prices are cheap, service is friendly and pierced, and metal from the likes of Iron Maiden and Judas Priest streams constantly throughout the day.

    The original Shorty's Bar-B-Q opened in south Miami in 1951, serving succulent ribs and smoky chicken 57 years with nary a hitch (save the 1972 fire that burned the original structure to the ground). This location boasts more than a hundred tables, and 'cue flies out of the kitchen almost as fast as it's ordered. But mass quantities does not equal mass quality, and the product suffers from it. The pork and brisket (available in sandwiches or as a platter) come shaved into thin, paper-like shreds, tasting more like holding table than smoker. Shorty's famous sauce can't save either from dried-out doom. Opt for the spare ribs, which are moist and meaty and circled with a brilliant pink smoke ring; or the chicken, which falls from the bone with the slightest flick. The place also serves heaping portions of Southern-fried fish and chips, jumbo shrimp, chicken wings, skirt steak, burgers, salads, and more than a dozen sides, from fried okra to loaded baked potatoes.

Smokey Bones seems to be gunning for the Ale House demographic: men who want to hang out with buddies, have a few drinks, watch the game, and, most of all, eat meat. With the culture of BBQ being competitive and finicky, diners either love Smokey Bones or hate it. Some BBQ fanatics say that Bones isn't authentic, while others hail it for doing a decent job of bringing 'cue to the masses. Menu standouts include sweet potato stix, hand-pulled pork, and baby back ribs. It's clear the bar is a big part of the biz -- they promote cheap Guinness and Jäger shots, plus concoctions like the Long Island Light Fluid (with four kinds of liquor) and Smojito (a mojito with Sprite). Events -- like a trivia night -- are kind of unusual for a chain and help differentiate it from a Chili's or an Outback.

With all the down-home ambiance of an Applebee's, Smokey Bones only compensates if you like their 'cue, and that's such a subjective thing. For the most part, it's smoked just fine, but the sauce veers toward the sweet, almost candyish end of the spectrum. The sides are nothing compared to what you'd find at a ma-n-pa joint, but the pork and beef sandwiches are filling, and their ribs have made many a fan.

    What a difference a move makes. When owner Jeremy Armstead decided to close his longtime Sunrise store and truck his barbecue downtown, it was a bit of a gamble. He packed up his collection of sports and music memorabilia that had for so long been a part of the place - like his antique Jack Johnson fight bell and his Miles Davis album covers - and hung them instead on the red and white walls of his new Seventh Street location. Then he got to smoking. Now, downtown denizens pack the joint daily, tapping their feet to the sounds of Coltrane wailing away in the background as they nosh on chopped pork dinners and Texas nachos smothered in melted cheese and pickled jalapenos. The spare ribs are meaty and tender, and the sauce is among the best around. And the place just seems to be getting better.

    Drive past this Fort Lauderdale roadside log cabin at lunch or dinnertime and you'll understand exactly why lines stretch out the door. The aroma of meat grilling over red oak and hickory is hard to resist. Today a Fort Lauderdale institution, Tom Jenkins has been smoking up the neighborhood since 1990. Originally a traveling barbecue trailer, it became a 40-seat restaurant back in 1996, and while it may have moved up in terms of location, the cooks here still use the same slow, oak-fired cooking process to churn out the restaurant's beloved Southern-style pork specialties — food that's garnered high praise as one of 500 best places to eat by the online Great Florida Restaurant Guide. That includes baby back ribs, the cut that sits closest to the hog's back loins for a fat stack of meat atop curved bone. At Tom Jenkins, they're cooked just right — not fall off the bone. Instead, just enough so the meat remains firm and juicy, the center exposing just a touch of pink. The sauce recipe, developed by the owners from old family recipes, is a thick, tasty blend of molasses, honey, and a variety of secret ingredients. Side dishes, from collard greens to macaroni and cheese, are uniformly excellent and artery-clogging (try the baked beans for a slightly more-healthful alternative). Whatever you do, don't miss the sweet potato pie for dessert.
